  I recommend gopractice.io - it has what you mention in the 3rd point with access to Amplitude account pre-filled with data. When I did it, there was no instructor and basically self-paced (though broken down very well), but from the emails I see they occasionally have "cohorts", so that might be different.   I'd recommend https://gopractice.io/ and not only for newbies. It's the best course I've ever done in respect to how it's built, not the content itself (which is also good). It's broken down into info, questions and practical assignments done directly in Amplitude, so you won't get only theory but practical experience in working with an analytics platform, which will surely look good in your CV and further help...
