Using your RPG of choice to make a character is a decent way to go (I like GURPS, they have templates and to make it easy, but character creation is open-ended and not class based like D&D). I'm still happy with Apple Notes for its integration with all of Apple Apps, easy sharing with family members, etc. I have tamed it more as an ephemeral and quick Notes App. The notes that starts there are usually transferred to a more permanent and organized Plain-Text setup[1] (currently guardian-ed by Obsidian).
