My own experience from more or less freelancing: If you create an account on a preconfigured server without setting it up on a machine of your own, e.g. On odoo.com / odoo.sh, or cloudpepper.io/ and don't need very specific configurations done, plus are willing to try out and learn a lot (we're speaking about days, not hours, depending on what you need even more than a week) you can do it on your own. Great list, thank you. One option is to always have more than one payment processor activated. Splitting payments across providers early on doesn’t have to be a bad thing.
