I'm still happy with Apple Notes for its integration with all of Apple Apps, easy sharing with family members, etc. I have tamed it more as an ephemeral and quick Notes App. The notes that starts there are usually transferred to a more permanent and organized Plain-Text setup[1] (currently guardian-ed by Obsidian). Use a file browser that supports jumping to a folder by frecency (examples: z (shell extension) or my-dired-recent-dirs() in my dired or https://fman.io/ for users that prefer graphical UIs).
