Miraheze seems to be offering a platform to create private wikis and it runs the same software as Wikipedia. You do need to fill out a form and request a wiki but after that you and people you specify should be able to see and edit that wiki (with the exception of the main page which can be seen by everyone). My solution, that I started to use probably 20 years ago, is having my own emails & domain on a webhost server. Expect to pay $30 for a webhost, domain name & registration each year.
