gVim (only on windows/linux) with a minimal config is my preferred. Fast but a few powerful built-in vim features like search, replace, syntax highlighting, spellchecking, auto-indent etc. It loads in about 1.5s on my machine and renders the text nicely. You can find distributions with plugins for those editors, like Doom Emacs or space vim. These days, I enjoy doing (neo)vim configs (with lua). Both can use the language server protocol (with different plugins or natively in neovims' case) and so you'd get similar setups done like in code. Source: about 1 year ago
