Custom template icons are not really possible. The icons are actually a graphical font, not images like .png, and this font is modified by reMarkable and embedded within the Xochitl binary. It is technically possible to replace it, but you would have to ensure its new length is fewer than its original bytes. I had ideas to build an app, and made few 2 years ago or so. Indeed these technologies are great to start with. I would suggest going with Kodular.io or thunkable.com instead of appinventor.
