That third graph doesn't do a good job of accurately assigning commits to organization. For example, two the largest GNOME contributors for Red Hat are Florian Müllner and Jonas Ådahl. Both of them don't commit using a redhat.com email address. Instead they use gnome.org and gmail.com respectively. I gave Lawnchair and Nova Launcher a try, but ended up back at OneUI. Nova offers a LOT of customizable options if that is what you want, but I thought it looked somewhat boring compared to Lawnchair and OneUI. Samsung's Good Lock mod (available in the Samsung Store) offers enough customization options that I was happy staying with OneUI.
