Just go to the .net core learning section. What anybody says here are just opinions, even your coworker's opinion is just that, an opinion.. I don't agree with them either as .net core 6 MVC pattern is recommended on their docs to support separation of concern patterns, I personally like using .Net core MVC on simple apps and you can use it with Razor/Blazor... Building your app using only GitHub Actions is possible, but it's definitely not a straightforward process.
