I'm still happy with Apple Notes for its integration with all of Apple Apps, easy sharing with family members, etc. I have tamed it more as an ephemeral and quick Notes App. The notes that starts there are usually transferred to a more permanent and organized Plain-Text setup[1] (currently guardian-ed by Obsidian). Which paid services are you referring to? It is likely that these services aren't distributing the projects they are based on, if so, then they are in compliance with the licenses of the open source projects, which don't require attribution unless you distribute them.
