I'm still happy with Apple Notes for its integration with all of Apple Apps, easy sharing with family members, etc. I have tamed it more as an ephemeral and quick Notes App. The notes that starts there are usually transferred to a more permanent and organized Plain-Text setup[1] (currently guardian-ed by Obsidian). We've used Padlet in the past but switched to Menti a year ago or so. There are many other tools, and most have an export feature, which allows you to download the data in a format readable by Excel. In Excel, we code each comment according to the categories covered by our in-house course survey: content, facilitation, duration, pacing, venue, materials, learning, relevance, satisfaction, and likelihood to recommend.
