How long of a hike/walk? Bridle Trails is fantastic. Trilogy area of Redmond (Redmond Ridge) also has a ton of trails. I highly recommend the alltrails.com app or site. You can search by easy/moderate/hard and distance and using the map zoom into a specific area. Source: 10 months ago
OH and use alltrails.com to look up trails you're interested in and see the latest conditions. If I were you, and people are saying there's an active bear on a trail I would avoid it since you are alone. You'll find some trails people mention not great visibility around some corners or due to huckleberry bushes...I'd avoid those too on your own. I record my cycle rides with an app, then I download them as .gpx to combine into one map later so I can keep track of them. The problem is my GPS is slightly inaccurate, so the lines are not exactly on the road, which looks messy. The only way I have found to fix this is to use a snap to grid tool from OS Maps or gpx.studio (both use OSM data), but I have to individually move each point to get them to all snap...
