what are some free, easy-to-use microtonal VSTs?

ZynAddSubFX Vital Surge XT
  1. ZynAddSubFX is an open source software synthesizer for Linux, Mac OS X and Microsoft Windows.
I've also used ZynAddSubFX, which is also a very powerful synth, though its interface (at least to me) is a bit of a clusterfuck. You could also try browsing this index of microtonally capable synths on the xenharmonic wiki.

Vital is a spectral warping wavetable synthesizer with drag'n'drop modulation workflow and animated preview of the synth's inner workings where needed. Comes with many modulation sources (including audio-rate), MPE support and FX chain.
I'd recommend Vital, it's a wonderful free wavetable synth made by the same guy that wrote Helm. Vital supports loading .tun, .scl, and .kbd tuning files, so it's very easy to use it for microtonal music (you can find a bunch of great pre-made tuning files here and an another enormous collection here). Vital's interface is pretty intuitive, and if tweaking all those parameters isn't your deal there are also a ton of freely available presets for it.

  3. Open-source subtractive-hybrid synthesizer formerly sold commercially as Vember Audio Surge.

Surge (recently rebranded as Surge XT) is probably one of the most microtonal-friendly free synths out there.
