I recommend Logseq! It's super powerful, especially for researching topics. It has community themes and plugins, as well as a great list of guides on how to use it.

The powerful Git client for iOS
Obsidian is the best!! It is open source and you don't need to pay for anything at all. You can store your notes in a github repo and also sync it with your ios device thanks to Working copy. There is plenty of tutorials on how to do it. Just use our best friend Google.
