Hmm, well this is a pretty big question tbh. Think of it this way that Gatsby is essentially a framework around React - so you will need to learn React to be able to use Gatsby. There's loads of resources online to learn the fundamentals of React on its own (using the classic create-react-app approach). Once you're comfortable with React on its own and ready to start building your project, jump right into learning Gatsby - the official docs have a great introductory tutorial.

Gatsby has some amazing responsive image optimizations available, but with an extremely large media library, you might choose to offload your image processing and hosting to something like imgix or AWS Serverless Image Handler - again, this will totally depend upon your needs.
