    Have you seen Obsidian? It runs on markdown text files stored locally, which means easy access with other tools. Built using the Electron stack and feels a bit like VS Code, has a plugin architecture so people have themes and templates and such. It's not free for commercial use though.

    OneNote is a great product and I had been using it for a few years. It has some quirks and a few months ago I went looking for an alternative and ended up with notion.so.
