Personally, this is something I would never bother to touch. I configure my domain's MX records to point to ImprovMX, which I then have configured with a wildcard so that .*@ bounces to my actual address, which is a standard webmail host (Gmail, Proton, etc.). Kind of the opposite of self-hosting, because it's an extra hosted service, but it's reasonably anonymous (the domain registrar is going to know who you are for billing, but hidden Whois from reputable registrars is legit, and everyone else involved will just have usernames), and you won't lose years off your life dealing with nonsense.
