I do something similar in GIMP. I'll share OBS with a portion of GIMP on the screen with a sidebar cutout of texteditor for initiative. The majority is the map or pics of npcs/landmarks/etc but in GIMP I'll only reveal what I need to. As long as I zoom to the current area then I don't need to worry about fog of war too much.
