I usually add Notes in OsmAnd, but don't even upload them, just fix them later on PC and delete them locally. That means the note just has to be intelligible to you, not to anyone. You might like OSM tracker for more detailed note keeping. I also enjoy using MapComplete (https://mapcomplete.osm.be) for detailed mapping on the road. There's a fully featured osm editing app for mobile, Vespucci, but it has a steep learning curve. Most people will collect data on the go, with an app like Osm Tracker, then use that data on pc in the web editor or JOSM. There's also a cool tool to edit and view specific themes, both mobile and on pc hosted at https://mapcomplete.osm.be (themes being added all the time). Once you have the basics mapped out, an app... In other words: don't copy other maps unless you have explicit permission from the map maker. Just go out yourself. There are a few user-friendly, mobile friendly tools out there to go surveying.
