If you want NES styled instruments, I'd recommend using FamiTracker since it's an NES emulator and supports the NES expansion chips that give a lot of awesome NES tracks (especially Konami music) their signature sound. Source: about 2 years ago
If you really want to replicate the sound of chiptune then your easiest route is using software designed specifically for the job. For NES your main options there are Famitracker (my choice) or Famistudio, both of which are free. The former is a tracker, the latter is sort of like a sequencer. Source: over 2 years ago
I'm aiming for a specifc and (hopefully) easier type of music: retro video game music: the bleeps and bloops of old games or even games inspired by old games like the soundtrack to Undertale for example. Not only is it fitting with the 2D games I make, but no lyrics and having such a controlled envioment seems like a good place to start.
