One really cool feature that KOReader has for self-hosters though is support for wallabag, which is a "read it later" service that you can self-host. Then you can access your saved articles through its web UI, Android app or KOReader. I highly recommend checking it out if you like reading articles. You can also gradually shift away from these companies' services without completely turning your life upside down. For example, you could switch from Google Maps or Bing Maps to OpenStreetMap without having to change other things in your life.
