I had ideas to build an app, and made few 2 years ago or so. Indeed these technologies are great to start with. I would suggest going with Kodular.io or thunkable.com instead of appinventor. NOTE: This question can be rephrased as "What app should I use to overcome Airtable's many user-interface limitations?" For many people Airtable + a front-end building service like the ones mentioned above is just right.
