If you want security: a phone with GrapheneOS installed, an always on vpn such as PIA VPN or Proton VPN, communication through secure end to end encrypted messengers such as signal, session, etc... And anonymous mobile data (there are a handful of data only esim providers that allow anonymous payment), I use INVISIV PGPP, not sure what's available in your country, as well as a voip phone number such as MySudo.
