It depends. For drawing, diagramming, and writing things out, I often use an iPad Pro and Apple Pencil, with the Paper app . I find that writing with a pencil-type thing works better for me than typing. I also do Rubber Duck brainstorming. This is often for asynchronous collaboration with other people. Atom. It's a free text editor for programmers, but it understands markdown. Markdown is like minimal style information. Your files remain plain text, readable by anything, but if you put them through a markdown processor you get html, which can then be easily put into an EPUB or copy pasted from a browser into word or what have you if you want to do that.
