The good thing is, you'll still have all of your media sorted and organized on whatever hardware was hosting Plex, so you'll just need to install new software to host it. If you're usually manage torrents from Windows, my answer is: Transmission Remote GUI. I'm running a few Docker instances of Transmission and transgui has given me the best experience so far. It's lightweight (~5 MB RAM), handles remote directory forwarding, and can control nearly (if not all) the functions/controls in Transmission, to include manually selecting files. I am using Transmission V2.94.0 since 2019 on my TS-251 with no problems. Just make sure to use 3rd party Transmission Remote GUI (I am using version 5.0.1) which is IMHO much better for torrents/files management than Transmission Client itself. https://sourceforge.net/projects/transgui/.
