I have a few recommendations based on your concerns. Find a VTT that fits your playstyle. Let the players keep their own character sheets. Have everyone roll real dice. Only use a VTT for sharing maps and placing tokens. owlbear.rodeo or astraltabletop.com have clean, simple interfaces. A free account is somewhat limited, and I can imagine you may need to only have uploaded whatever assets you need for the next session due to space limitations, but it's easier to use and way more pretty than anything else I've tried.
