Shiny White Box sells a variety of screen capture apps, they work really well in cropping a specific area or the whole screen. Their iShowU app has been around for a long time and has a deep feature set, it has recently been optimized for the M1. It can encode in a variety of different formats like MP4, H264 and MOV. Back in the day, for recording screens directly, I used a program called iShowU. It was great for recording screens, tutorials, etc. I'm sure there are a hundred other apps like that if you just look for "Video Screen Capture" or something like that. But I really liked iShowU.
