I can only go from my own experience. I used to have issues with sitemap when using a sitemap plugin. However, I found that using rank math is best all round. I deleted all sitemap from Google, installed Rank Math and used the settings they suggested. I then adding the sitemaps back to GSC. Source: about 1 year ago

For example I'm guessing you need several photo's, a title, a description, ....). These are all fields that need to be stored in the Database in some way.
