I was also looking for server-side analytics, created my own, and now it's a product! The idea is that tracking can be done from both, a JS snippet (for easy integration) and an API. Last year I stumbled upon https://66analytics.com/ and liked it quite a lot. It is very light but covers quite a lot of stuff that I wanted to have. It’s a one time payment but only around $60 I think and does not have any limitations after that.
