I'm still happy with Apple Notes for its integration with all of Apple Apps, easy sharing with family members, etc. I have tamed it more as an ephemeral and quick Notes App. The notes that starts there are usually transferred to a more permanent and organized Plain-Text setup[1] (currently guardian-ed by Obsidian). CKeditor (https://ckeditor.com/) is worth looking at. Although it emits HTML by default, internally it uses a richer doc structure that supports versioning, concurrent collaborative editing, etc. There should be a way to access that structure. Source: about 2 years ago
