  There's an odd little retro dungeon crawler called Paper Sorcerer that might work for you. It's always high contrast, but I think some areas are light mode instead of dark mode so you might need something that can invert the colors at points (I'm not sure if something like NegativeScreen would work in games). There are many programs you can enroll her in BUT if she wants to work at her own pace you can look online for what your state/municipality expects a child to know in each year.   However, the math instruction that worked for me (I suddenly had to teach upper level math to expelled students in a self-contained class - and didn't know anything past Alg 1) was khanacademy.org, a free online program.
