You need to go to the dashboard at thelightphone.com :) That's where you can add those additional tools. I think Maps is coming this week, so I don't believe you can add that one quite yet. For the time, I believe I set this up when I started the phone. Did you do like a factory re-set type of thing when you got it? I went to the "time" setting in settings and it looks like all you can do there is change the time... Source: almost 3 years ago
I got mine and my son's two weeks ago. From placing the order to having the phone in hand it took 6 days. Granted I got the LP202 (international version) but I can't imagine the US version would take much longer.
