You should not store your data in git itself, but rather use git to version your data sets. The currently best option for that is (IMHO) https://lakefs.io though there are a few others in various states of usability/maturity. Source: about 1 year ago

As someone who built a SaaS for your 2nd use case (Homechart: https://homechart.app, lifetime license available!), the real reason is any kind of software that integrates with other things has an ongoing maintenance cost that needs to be paid by all of the users to keep it working.
