I have this old Acer One 10 tablet/laptop, used to have windows 8 on it and for some reason has JingOS on it. This here. And I can't for the love of it install any other OS on this thing. You can use JingOS. It has good support for touchscreen but it is not super stable yet. But for regular usage, I think it's okay. You can also Gnome based OS. The recent Gnome 40 has good touchscreen support. For Gnome 40, you can try Fedora or Ubuntu 20.10. Source: over 2 years ago

The only one I know of at the moment is Endless OS. I used to think they were untrustworthy but they work with Gnome extensively so it should be good to use. I’m not sure of any other project that is well-maintained that might suit your needs. Source: over 1 year ago
