The only one I know of at the moment is Endless OS. I used to think they were untrustworthy but they work with Gnome extensively so it should be good to use. I’m not sure of any other project that is well-maintained that might suit your needs. Source: over 1 year ago

There is also Plasma Mobile that is not stable yet but at least it is fairly light weight and was built with touchscreen support in mind.
