Custom template icons are not really possible. The icons are actually a graphical font, not images like .png, and this font is modified by reMarkable and embedded within the Xochitl binary. It is technically possible to replace it, but you would have to ensure its new length is fewer than its original bytes. Blender is amazing for rigging, but for everything else you described I'd say you should consider svgator.com. Not that popular from what I've seen on here, and the free plan is limited, but as far as ease of using goes it's hard to beat. It's browser-based, so there's nothing to install/download.
