I recently became aware of https://frontegg.com and, while I haven't evaluated it, it looks like they've designed it to solve these pain points. Looks like you can actually embed some of their pages directly in your UI so you don't have to build that yourself. (And just to be clear, I have no association with Frontegg). I use a little utility app called Mountain. It can be set to "Unmount external volumes on sleep" and "Mount favorite servers on wake from sleep". I use it with USB and ethernet-connected devices and it has done exactly what I want. But I'm still on Catalina and have never used a Thunderbolt DAS.
