You could proofread everything from CVs to manuscripts and academic theses, depending on what sounds exciting for you. I work full-time as a freelance writer. My best piece of advice is to figure out your niche (health, finance, tech, lifestyle etc...) and approach a few brand name blogs or publications and ask if you can write an article for them for free to publish on their site.
