I've been using https://exist.io/ for years. It can automatically sync a bunch of info from Apple Health and other providers, but also allows you to create custom data fields and manually enter data. For time tracking I lean on Time Sink. If you want something more manual then I feel like there are a zillion task-tracking timers out there but I couldn't point you to any one in particular. Wikipedia says Toggl has an OSX app so maybe you wanna look at that one first. Source: about 2 years ago
