I've been using https://exist.io/ for years. It can automatically sync a bunch of info from Apple Health and other providers, but also allows you to create custom data fields and manually enter data. Also, I don't think Airmail responds on here much, but I've found if you click the chat icon at the bottom right of this page, they're pretty good about responding by email.
