For tools, on PC, the go-to tools has been EXIF Purge, and there are several tools on both App Store and Play Store (I use Imagepipe). Samsung (and Google Camera, apparently) allows disabling location tags in their camera app, though if you don't trust them and find its result to be OK, then you can use Open Camera instead. I just have my game images in folders. Often they're within projects in Obsidian because I use that to plan and make notes for my games. In the past I used EagleFiler but it's not cross-platform and I now use a Linux machine a lot so I've moved to use Obsidian generally - EagleFiler is a powerful tool for cataloguing all sorts of media though.
