As for an excel spreadsheet I'm not sure I've come across anything like that, but I have used easybib.com throughout my college, until I found out about the Word feature. It might help to use a highlighting app, something like Weava (weavatools.com) which will store and collect your highlights off to the side of the text so you don't have to keep flipping through pages. Source: about 1 year ago
