We're commonly doing this with logging, using services such as Loggly or DataDog. We're using managed databases, be it on AWS, Heroku or database-vendor-specific solutions. I use a little utility app called Mountain. It can be set to "Unmount external volumes on sleep" and "Mount favorite servers on wake from sleep". I use it with USB and ethernet-connected devices and it has done exactly what I want. But I'm still on Catalina and have never used a Thunderbolt DAS.
