We're commonly doing this with logging, using services such as Loggly or DataDog. We're using managed databases, be it on AWS, Heroku or database-vendor-specific solutions. At some point you have to trust that your admin is not snooping. At any point you can if you wanted to view user emails and files using the api, vault , or 3rd party tools so this is always a risk. I would say using a 3rd party tool like afi.ai has the best logging and over all utility. Also sub accounts can be created for viewing the backups by other staff members. Source: about 1 year ago
