As for dolls..this site is something I’ve found which may work. It seems that a bunch of 3D doll making artists post their work here for sale, which makes me believe they may not be recasts as they artist themselves usually post part of the process on the listing, or the product while in their designing program. Prepare to be let down (or pumped up, I suppose). They're all printed. I wish I could take credit for the sculpts, but each one is printed. I have a few recommendations based on your concerns. Find a VTT that fits your playstyle. Let the players keep their own character sheets. Have everyone roll real dice. Only use a VTT for sharing maps and placing tokens. owlbear.rodeo or astraltabletop.com have clean, simple interfaces. Astral Tabletop https://astraltabletop.com currently has my attention. A free account is somewhat limited, and I can imagine you may need to only have uploaded whatever assets you need for the next session due to space limitations, but it's easier to use and way more pretty than anything else I've tried.
