I’m using https://checkmk.com/ to monitor stuff and it seems to work great. Lots of built in features and functions and if they don’t have what you need you can also create custom scripts to check and report on anything you can dream up. Have a look at CheckMK open source version is really good, you can spin it up in a docker container and is relatively easy to get some initial monitors going. Depending on what type of cybersecurity you want to do, there's other ways to set yourself apart as well. Another way I'd get confidence in someone's abilities is if they've made bug bounties on bugcrowd.com or hackerone.com, for example.
