  I'm sure there are many ways, but I used https://sabre.io/baikal/ to get a CalDAV and CardDAV server on cheap (shared, bog standard) web hosting, and then pointed Thunderbird to it. Starred messages cannot be shown on top. Eyeroll.   Alternatively if you want to keep what you have I wouldn't recommend using the SoGO even though it's the nicest and most modern option.
