You can use Netflix, Spotify, etc. Offline on the plane. Try Geforce Now in Chrome and play famous AAA games. To my understating, you can pay to have Obsidian notes sync. I know nothing of the security around the encryption. One of the main reasons that I went with Joplin Notes over Obsidian is that Joplin gave me the ability to sync without paying for access to a server that I don't know well enough to trust.
