It's hard to imagine you've not seen Google's doodle guessing training (or their other experiments) but it's just another example of how little information you actually need to create a recognizable image, though Canvas also shows this off, but it has the benefit of material information. To come back to your original question, as far as I'm aware anyone can publish on arxiv or researchgate. People will just tend to take you less serious. But if you actually want to build something, run it yourself and have no fees, you should check out my project vendure. It is built on Node with TypeScript and handles all the hard stuff for you. If OTS does not fit the bill, try one of the many open-source e-commerce frameworks that already solved all the hard parts for you, and allow you to just build out the custom parts specific to your requirements. Another option is to take a framework that handles 80% of the stuff you need (customer/order/inventory managament, payments, shipping etc) but that gives you the flexibility to create whatever custom flows you need.
