Hey , I think I can help you. As I understand you have 2 switch and one router. You can actually practice a lot of things. I would recommend you to download packet tracer and create a lab yourself! Give yourself challenges about protocol configurations, VLANs, VPNs and etc. Or if you say that you dont want to make it yourself or you want to experience new things, GNS3 and EVE-ng communities have a lot of labs. There are many programs you can enroll her in BUT if she wants to work at her own pace you can look online for what your state/municipality expects a child to know in each year.
